Spruce shoot syrup, sweet and savoury.

  • 2 litres of spruce shoots
  • 2 litres water
  • 1 kg of suger
  1. Soak in water over night
  2. Boil the spruce shoots for about 1 hour in the water
  3. Strain the spruce shoots and add the sugar
  4. Cook for 1-4 hours
  5. Put in clean hot jars
  6. Förvara svalt

Good for ice cream and gives a good spice to everything you otherwise also use syrup for.

Remember that you need the landowner’s permission when picking spruce shoots!
