Spruce shoot syrup, ‘cough medicine’

Take a clean glass jar and fill it halfway with clean spruce shoots. Fill the other half with sugar on top of the spruce shoots. Cover with a plate and place in a sunny window until the sugar has melted over the spruce shoots, this may take a month or so. Strain the resulting liquid and place in the fridge. Works well as a soothing cough medicine.

Remember that you must have the landowner’s permission when picking spruce shoots!
